Paneer holds the top most ranking in my favourite list along with eggs. So, when I’m on vegetarian diet, I always end up ordering Paneer dish at restaurant. This is one my favourite, easy to make dishes with Paneer.
Basmati Rice/ Any long grain Rice- 2 cups
Water – 3 Cups
Paneer/ Tofu – 1 Packet (Cubes)
Tomatoes- 4 finely chopped
Turmeric- half a tsp
Javithri- 1 number
Cumin Seeds- 1 tsp
Curd- 1 cup
Onion- 1 thinly sliced
Ghee- 4 tblspn
Salt to taste
Cinnamon/ Patta- 2 medium pieces
Cloves/ Graambu – 6- 8 pieces
Cardamon/ Elaichi- 6- 8 numbers
Star Anise- 3 numbers
Green Chilli- 6- 8
Coriander Leaves- 1 Small cup
Wash and soak the rice for 20- 30 minutes. Drain and set aside. Grind in the ingredients mentioned under “ For Grinding” and set aside Shallow fry the paneer cubes with Ghee in Dosa tawa or frying Pan. Set aside. Heat Ghee in pressure cooker and add Javithri and Cumin Seeds to it. Add onion and saute it till golden brown. Add the ground masala till the raw smell fades/ till oil separates from the mix. Add salt and tomato and cook till tomato gets mashed with the mix. Add Tomato ketchup and curd and fried paneer cubes and mix well. Add the soaked and drained rice to this. Cover the cooker and cook for approximately 15 minutes (around 4 whistles). Let the pressure go on its own. Fluff the rice with a fork. Serve with Raita.
Prepare all the ingredients
Take all the ingredients under ‘ For Grinding’ and grind them into a fine paste.
Add a teaspoon of ghee on frying pan and fry the paneer cubes.
Heat Ghee in pressure cooker and add javitri and cumin seeds and onion. Fry till golden brown. You add salt at this stage to quicken the process.
Add tomato and once they turn mushy and the ground paste. Fry till the raw flavour fades.
Add tomato ketchup, curd, fried paneer cubes and mix well.
Add rice, water. Check for salt at this stage. You may add more if required. Close the cooker and cook for approximately – 5 whistles. Let the pressure release on its own.
Beautiful, isn’t it? Don’t mix it yet. Let it cool down and get firm.
Meanwhile, roast cashew nuts and may be some raisins in the left over ghee in paneer fried pan.
Add them to the Biriyani and mix well.
Serve hot with raita.. Yummm.. :).
