This is my comfort food when I’m in mood for a quick soulful lunch or when there is no veggies in kitchen 😛 . Super easy to prepare.
Oil (Coconut/ Gingelly/)- 3 tblspn
Mustard Seed/ Kaduku- 1 tsp
Cumin Seeds/ Jeerakam- 1 tsp
Dried Red Chilly- 3- 5 Numbers
Green Chilly- 2- Numbers
Ginger- 1 tsp finely chopped
Cashew (Optional)- 5- 8 numbers
Curry Leaves- 1 Stem
Coconut (grated) – Half coconut
Rice- 3 Cups (Cooked)
Onion (Optional)- Half a cup
Salt to taste
Heat some ghee in the kadai and road cashews till golden brown. Set aside.
In Kadai, heat the oil. Add Mustard to kadai and wait till they pop. Add cumin seeds. Sauté till slightly turn brown. Add chopped ginger and saute for 2 minutes. Add curry leaves and dried red chillies. Add Chopped onion and sauté till the raw smell is gone
Add grated coconut and mix well. Add salt and mix well. Simmer the stove and add the cooked rice and mix well.Add the roasted cashews and serve.
Keep the ingredients ready.
Roast cashew nuts in ghee and set aside.
Heat oil and add mustard and cumin seeds.
Add ginger, curry leaves, chillies and saute the for few seconds.
Add Chopped onion and sauté till the raw smell is gone.
Add grated coconut and mix well.
Add salt and mix well.
Simmer the stove and add the cooked rice and mix well.
Easy to prepare, healthy and soulful Coconut rice is ready.
Tip : Do not sauté the coconut for more than 2 minutes. This helps in retaining in the fresh smell of coconut.
Cook rice and cool it completely before using for this recipe.
