Ghee Rice/ Nei Choru

Ghee Rice is perfect for those who are not sure about their skills in preparing Biriyani. Ghee Rice is the saviour when you want to prepare something special for your guests, but at the same worried of goofing up your Biriyani Recipe. We all have experienced this at some point in our life. For this recipe, I use almost all the Indian spices that I can get my had into. πŸ™‚

Ingredients:

Ghee- 4 tblspn (Be generous Β πŸ™‚ Β )

Cashew- 8 – 10 numbers

Raisins- 8- 10 numbers

Cardamom/ Elaichi- 5 numbers

Clove/Grampoo- 6 numbers

Cinnamon/Patta- 5 medium pieces

Mace/Javithri- 1 number

Star Anis/ Chakra phool- 3 numbers

Bay Leaf- 1 number

Onion- 1 (thinly sliced)

Green Chilly- 4- 6 numbers (Sliced)

Ginger- Garlic paste- 1 tsp each

Rice- 2 Cups

Coriander – As per requirement (Finely chopped for garnishing)

Salt to taste.

 

Method:

Soak Rice for 15- 20 minutes. Heat one tblspn ghee in a pressure cooker and add Cashews and raisins, roast them well and set aside in a plate. Add thinly sliced onion to the same cooker and saute till it turns to brownish golden colour. Set aside in a plate. Add the remaining 3 table spoon ghee to cooker and add the spices one by one and saute well.Β  Add green chilly. Drain the water from Rice and add the rice to cooker. Fry the rice in medium flame for about 3- 5 minutes Add 5 cups of water to the rice and close the lid, and cook till 5 whistles. Remove the cooker from stove and set aside. Mix fried onions, Cashews and Raisins with the rice; and garnish with chopped coriander leaves.

Roast cashew nuts and raisins in ghee and set aside. I started out to prepare Ghee rice only to realise I didn’t have any raisins πŸ˜›

Saute the onions till golden brown and set aside.

Saute the dry spices

Add ginger- garlic paste and chilli and saute till the raw flavour fades.

Add rice and in medium flame for about 3- 5 minutes

Add 5 cups of water.

Add salt and mix well.

Close the lid, and cook till 5 whistles. Let the pressure release on its own.

Mix fried onions, cashews and raisins with the rice.

Garnish with some chopped coriander leaves.

Simple, staple, easy to prepare Ghee Rice is ready. Serve with any veg or non veg gravy or just a simple raita.
